Espresso and Frangelico Truffles

  • Place ¼ cup (60 ml) pitted prunes in a bowl. Pour over 4 tsp (20 ml) good quality, strong espresso and set aside for 1 hour.
  • Melt 40 g butter, ¼ cup (60 ml) Nestlé Dessert Cream and 350 g 70% dark chocolate (broken into pieces) in a bowl and whisk until smooth.
  • Add 1 egg yolk, 1 tsp (5 ml) Frangelico liqueur and the prune and espresso mixture and stir to combine.
  • Chill until set.
  • Form into bite-sized balls and chill once more.
  • Roll in generous amounts of sifted Nestlé Cocoa Powder.
  • Refrigerate till ready to serve.
