Mini mayo loaves

6 - 8 mini loaves or 1 large loaf

Instructions

  • Preheat oven to 180° C.
  • Combine 2 ¼ cups (550 ml) flour, 1 tsp (5 ml) salt, 2 tsp (10 ml) brown sugar, 1 tsp (5 ml) bicarbonate of soda and 2 tsp (10 ml) baking powder in a bowl.
  • Add 375 g mayonnaise, 1 can ( 380g) Nestlé IDEAL Evaporated Milk and ½ cup (125 ml) water and mix well.
  • Lightly mix in 3 tbsp (45 ml) chopped chives and 12 chopped peppadews.
  • Spoon into greased individual bread pans or 1 x 1 kg loaf pan and use 125 g cubed feta to sprinkle over loaves or loaf.
  • Bake for 25-30mins (or 1 hr for the large loaf).
